Restaurant Recipes-chi Chi’s Baked Chicken Chimichangas

If you are like me you love going out to eat but hate the cost. It is always nice to have a night out without having to fuss over what to have for dinner and trying to make something quick that will please the whole family.
Mexican food is a true favorite in my household. The usual tacos made from a mix quickly become mundane. For a quick and easy Mexican meal try making Chi-Chi’s Baked Chicken Chimichangas.

Chi-Chi’s Baked Chicken Chimichangas
What you will need:
2 1/2 cups cooked and shredded chicken
2 tablespoons olive oil
1/2 cup onion, chopped
2 garlic cloves, minced
1/2 tablespoon chili powder
16 ounces salsa (choice of hotness)
1/2 teaspoon cumin
1/2 teaspoon cinnamon
Pinch of salt
6 10 inch flour tortillas
1 cup refried beans
Olive oil (for basting)
Sour Cream
Guacamole
Pre-heat your oven to 450 degrees.
In large saucepan, sauté onion and garlic in oil until tender.
Stir in chili powder, salsa, cumin and cinnamon. Stir in shredded chicken and let the mixture cool.

Spray a baking ban with cooking spray. Working with one tortilla at a time, spoon a heaping tablespoon of beans down center of each tortilla. To make the tortilla easier to handle warm them in the microwave. Top the beans with about 1/2 cup of the chicken mixture. Fold up the bottom, top and sides of the tortilla; secure with wooden toothpicks if necessary to keep them closed while baking. Place chimichangas in greased baking pan, seam side down. Brush all sides with olive oil. Bake 20 to 25 minutes or until golden brown and crisp, turning every 5 minutes to brown both sides and avoid burning.

Serve with salsa, sour cream and guacamole and enjoy.

This recipe is easy to prepare and will be enjoyed by the whole family. Do not let money or time be your excuse to avoid a good restaurant style meal when they are so easy to recreate.

A lot of Mexican candy contains tamarind. Salsaghetti looks a lot like a meal but you do not get candy meatballs with it.

Popsicles in Mexico are different to what you might find in other places. A lot of Mexican popsicles are spicy hot, even jalapeo hot. American kids might like cinnamon candies but Mexican kids like chili powder on the outside of their candies. The inside can be different flavors and some examples include chili, mango, watermelon, cherry, strawberry, and pineapple.

Since Mexico is responsible for introducing the joys of chocolate to the world, thanks to the Aztecs, you might assume that present day Mexicans enjoy chocolate candies. Actually, they do not consume that much compared to other countries. What they prefer is to use chocolate as an ingredient in their drinks

A popular candy throughout Mexico is known as Dulce de leche. It means, “Milk candy.” Milk-based syrup is similar to caramel by how it looks and tastes. It can be as a sauce, or as a caramel-like candy. It is simple to make, simply by boiling milk and sugar. Besides being in candy, it is also used in cakes, cookies, and ice cream. People even spread it on toast.

It is even well liked outside Mexico. Starbucks serve a dulce de leche flavored latte and you can get dulce de leche ice cream throughout America’s southwest states.

You can buy Mexican candies from local Mexican grocery stores or even online. If you do not like to mix your chili with your sweet foods, you can also choose from caramel candies or chocolate candies. There are many types of Mexican candy to choose from so have a look today!
