Mexican burnt milk fudge, or “leche quemada” as it is known in Mexico, is a rich combination of evaporated milk, sugar, butter, vanilla and more. This sweet Mexican delicacy is one of many easy Mexican recipes you can make if you fancy making something sweet and delicious. This is a traditional Mexican food recipe, although it is also the most popular dessert in Tex-Mex restaurants.

“Leche” is Spanish for milk and “quemada” means burnt, which is quite apt, since this dessert is made by scalding milk in a pot. This Mexican burnt milk fudge does not taste burnt though. It tastes like regular fudge and the goat’s milk gives it an authentic Mexican flavor.

There are recipes for microwaved leche quemada but it comes out better if you cook it in the traditional way. This sweet treat is traditionally enjoyed over the Christmas period in Mexico, but it is too good to restrict to that time only.

You can buy Mexican burnt milk fudge in Mexican markets and sometimes it is spiced or contains sherry or Madeira wine. Leche quemada can be hard and chewy or very soft, depending on the recipe you follow. You can also add more liquid to give it a sauce-like consistency, which would make it great for serving over a pie or with ice cream.

Recipe for Leche Quemada

The following recipe makes thirty-six bars. If you cannot find evaporated goat’s milk, you can substitute regular evaporated milk instead. Feel free to leave out the pecans if you want to, or substitute walnuts instead.

What you will need:

  • 5 lbs sugar
  • 2 cups light corn syrup
  • 2 cans evaporated milk, 12 oz each
  • 12 oz can evaporated goat’s milk
  • 4 tablespoons butter
  • 1 cup pecans
  • 1 tablespoon Mexican vanilla extract
  • 1 tablespoon salt

How to make it:

Put the milks, corn syrup, salt, and sugar in a big pot and attach a candy thermometer to it. Cook this mixture for an hour over a moderately low heat, stirring it frequently with a wooden spoon. Turn the heat up to moderately high and cook the fudge, stirring it for twenty minutes. Turn the heat up to high and keep cooking the fudge and stirring it all the time.

Scrape the burnt bits off the bottom of the pot as you go. When the candy thermometer reaches 245 degrees F, take the pot off the heat and stir in the butter and vanilla extract. Stir the fudge a few times as it cools down.

When it reaches 180 degrees F, stir in the nuts and transfer the mixture into a greased 12 x 9 inch baking pan. Let it cool a bit more and cut it into bars before it sets completely. Let it cool right down, and then serve.
