Making Burritos

There is a special type of taco that uses flour tortilla for the fillings. They are called Burritos, although the fillings are not so similar with the regular taco. The flour tortilla is usually lightly grilled or steamed. This step softens the tortilla and makes it more pliable. The traditional fillings are refried beans, Mexican rice or just meat and the size of the burrito itself is relatively small. American burritos are considerably larger than the Mexican counterpart. In the US they put Mexican rice, beans, lettuce, salsa, some meat, guacamole, cheese and sour cream. The name burrito literally means “little donkey” in Spanish. The rolled-up tortilla resembles a donkey’s ear or the bedrolls that donkeys carry – probably why it was named so.

There are four burrito types: San Franciso burrito, is the most common kind served in the Unites States, sometimes as an enchilada or as burrito suizo; New Mexican burrito that is similar to the traditional one; Breakfast burrito that is considered an entire meal; and the Chimichanga, which is deep-fried burrito.

Here is a simple breakfast burrito recipe. The following are needed:

* 2 pounds ground pork sausage

* 12 eggs, beaten

* 1 4-ounce can green chili peppers, drained and chopped

* 8 pieces 10-inch flour tortillas

* 8 ounces Cheddar cheese, shredded

* 1 teaspoon all-purpose flour

* 1 cup milk

Cook the sausage in a large deep skillet over medium heat. The sausage is evenly browned, set aside and keep two tablespoons of the drippings. Pre-heat the oven to 350 degrees. Add the eggs and green chilies in the skillet, and stir occasionally until the eggs are scrambled and set. Lightly grease a 9x13inch baking pan. Assemble the burritos by covering the tortillas with spoonfuls of the sausage, cheese and eggs. Roll up the tortillas and line them seams down on the baking dish. Make the gravy by heating the reserved drippings in a skillet. Add the flour slowly and stir. Add the milk while continuously stirring, until the gravy thickens. Pour the gravy on top of the burritos. Place the baking dish in the oven and bake for 10 to 15 minutes or until the gravy is bubbly.
