Breakfast burritos have become immensely popular in a short amount of time. What used to be a meal eaten for lunch and dinner times have now migrated to breakfast without a vast change in ingredients. You can still have your favorite meats and cheeses, but with a more refreshing taste that will get you ready for a long day or simply just because you’re hungry. Learn how to make this meal eaten at any time of the day.
For this version of the breakfast burrito, we’re going to be using: a large tortilla (preferably flour for this one but corn is fine too), steak, eggs, cheese (i usually use mozzarella and mix in some American), onions, salsa, and potatoes.
The first thing we’re going to do is start on the potatoes. Clean your potato and peel it. If you have a shredder, take that and shred your potatoes. If you don’t have one, you’re going to have to julienne them as thinly as you can. We are going to make a potato pancake with our shredded potato. Heat your frying pan to medium high heat and put your potatoes on the pan. Make it into a form of a circle and cook on both sides until golden brown. Once you’re done with the potatoes put it on the side for now.
Now it’s time to cook your steak. Cut them into bite-sized cubes and lightly season them with some salt and pepper. Now, take them to the pan and first grill them on high to seal in the flavor, and then lower the heat a bit and cook it all the way through. They will cook through quickly because they’re in small bite sized pieces. Once you’re done with that, set it on the side.
As for your eggs, you have more than one way to cook them. You can either cook them sunny side up or scrambled. Personally, I like them scrambled because it gives a complete taste to them. You all know how to make scrambled eggs, so I won’t go through the process of making them.
Now, take your onion and finely chop them into tiny pieces. You can either take these onions and add them into the salsa or just put them into the burrito separately.
Now it’s time to assemble our breakfast burrito. If you like, you can take your tortilla and either heat it up a little in the microwave or pan. Regardless which method you use, after you heat it, lay your potato pancake first and then add your cheese. After you’ve added the cheese, add your eggs, steak, and salsa and onions in any order that you’d like.
Now, simply wrap it up and cut it in half to serve. Your friends and family will definitely love eating this variation of the burrito, even though burrito stands for a “small donkey”.
