Mexico is a pretty big country, like the United States, and it offers many different kinds of foods. Each area of the country has a different style of food and its own regional specialties. There are dishes which are very popular in some areas of Mexico but relatively unfamiliar in other areas of the country.

In fact, some of the dishes, which people in the US think of as Mexican, are largely unknown in Mexico itself! For example, let us take chimichangas and nachos. Chimichangas were actually invented in the southwestern United States; and nachos which did originate in Mexico but are found more plentifully in other countries than in Mexico itself. The things, which you think you know about Mexican food, may not be representative of the reality of this cuisine, as it exists in the country.

The coastal regions of Mexico have their own regional Mexican recipes, which as you would expect, feature fish and other seafood. Veracruz in particular is known for its fish dishes, especially those which are “Veracruzana” (in the Veracruz style), especially those served with a spicy tomato sauce containing olives and capers – – having a clear influence from Spain.

The state of Oaxaca is known for mole. These often-spicy sauces are made from a variety of ingredients including chocolate, chilies, pumpkin seeds, and others. They have a fusion of different flavors and vegetable, meat and cheese mole dishes are all quite common.

There is a lot of obvious Spanish influence on the local dishes served in the north of Mexico and beef dishes especially are more common here than in the rest of Mexico. This is primarily because of the Spanish colony positioning on either side of the Rio Grande and the colonists’ demand for beef. This is the part of the country where you will find the famous carne asada, which is also a very popular dish in Texas and the American southwest.

In Central Mexico, you will find dishes and culinary influences from neighboring regions of the country, but Central Mexico is also the home of some distinctive Mexican recipes, which are the region’s own. These include the spicy goat soup birria, the hominy and pork soup pozole and the tripe soup known as menudo. It is the region’s soups and stews, which are the most famous of its dishes, but central Mexico is also the home of carnitas, a fried pork dish that is often served on tacos and tortas.

There are also Mexican recipes, which are popular, nationwide, such as chiles en nogada, a stuffed poblano dish topped with a walnut cream sauce and pomegranate seeds (the three colors of the ingredients suggest the colors of the Mexican flag). Tacos are another Mexican food, which you will find all over the country, though there is a great regional variation in terms of which ingredients are used to prepare them.

Mexico contains a great many different climates and different indigenous cultures, all with a greater or lesser degree of influence from Spanish cuisine, as well as from other groups of immigrants, all of whom have brought their own culinary influences. Mexican cuisine offers a lot to explore, going well beyond the familiar tacos and burritos; try a few regional Mexican recipes for something different and exciting at your table.

Fire Cracker Italian Sausage Pasta

You will find that this recipe is very easy to make. And you can prep all of your ingredients in advance. Perfect for the busy mom on the go. Once you have all your troops ready for dinner, you can toss it all together in a matter of minutes.

This is a recipe that is a huge hit with my entire family. Even my picky toddlers!

Fire Cracker Italian Sausage Pasta

Recipe

1 pound uncooked wheat pasta (be sure to use a fun shape)
1 large zucchini – sliced
1/2 cup red onion – sliced
3 T fresh garlic – chopped
1/2 cup olive oil
3 Italian sausage links – sliced
1/2 cup frozen peas
1/4 cup fresh basil
1/4 cup green onions
Salt and Pepper

Preparation

Pasta:

Cook pasta according to package. Drain. Set aside.

Italian Sausage:

Cook Italian Sausage until done. Set aside until it is cool enough to touch. Slice into bite size pieces.

Herbs & Vegetables:

Zucchini – wash, slice into bit size pieces
Red Onion – peal, slice
Fresh Garlic – peal, chop
Frozen Peas – soak in warm water until no longer frozen, drain, set aside
Fresh Basil – wash, chiffonade (see tip below)
Green Onions – wash, slice into small pieces

Instructions

Heat a pan large enough for all of the above ingredients. I tend to use the stock pot I boiled my pasta in. Throw in 2 T. olive oil, zucchini, red onions, garlic, and Italian sausage. Sauté until zucchini is tender.

Once tender, toss in all of your herbs and vegetables, and the remaining olive oil.

Add salt and pepper to taste.

Sprinkle with parmesan cheese.

Tips from Chef Bek:

White pasta can be substituted for wheat.

Dried basil can be substituted for fresh. (when using fresh herbs in a recipe, use 3 times as much as you would use of a dried herb)

Chicken broth can be substituted for the oil which goes into the pasta once tossed.

Cooking spray can be substituted for the oil you sauté your vegetables with.

Turkey sausage is a great substitute for pork Italian sausage.

Basil Tip:Chiffonade – To slice an herb or leafy vegetable into thin strands. Best way to accomplish is by stacking herb directly on top of each other, then rolling the leaves and slicing.

Mexican food is not all spicy – that is a common misconception about the cuisine. There are non-spicy Mexican soup recipes, Mexican salad recipes, Mexican dip recipes and plenty more. However, Mexicans do like to use chili in their recipes and sometimes it is fun to make spicy Mexican recipes.

You can spice up pretty much any Mexican food recipe by adding some minced chili or chili powder. If you are making guacamole or salsa, you can decide how hot you want it. Guacamole is usually served alongside spicy food because it is cool, creamy and cools the mouth but fiery salsas can be really flavorful and the fieriness of the chili contrasts brilliantly with the sweet, cool tomatoes.

Authentic Mexican food recipes like Mexican stew and Mexican casserole can be made as spicy as you want. If you are feeding a family or mixed group, you might want to make your Mexican food mild and leave a bottle of hot sauce on the table. That way, people can adjust the spiciness of their own meal.

Sweet and Spicy Food

The Mexicans also love to combine sweetness with spice and snacks like caramelized jalapenos or chili flavored chocolate are not unusual in Mexico. The sweetness and spiciness complement one another in a way you would only understand if you have tried it.

Mexican Style Spicy Bean Burgers

This is a very simple recipe for Mexican bean burgers. Beans are one of the primary Mexican staples and whether you are looking for a vegetarian Mexican recipe or just something a little bit different, this healthy, wholesome, and tasty bean burger recipe is guaranteed to satisfy your hunger.

This recipe makes four to eight bean burgers, depending how big you make them. If you want to make appetizer recipes for a Superbowl party or similar event, you can make mini bean burgers or, if you want to satisfy a raging hunger, make them big and juicy and serve them with lots of toppings!

What you will need:

  • 16 oz can red kidney beans
  • 1/2 cup flour
  • 1 carrot
  • 1/2 green bell pepper
  • 1/2 white onion
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/8 teaspoon chili powder
  • 1 cup breadcrumbs
  • 1/8 cup chunky salsa

How to make them:

Preheat the oven to 450 degrees F. Drain and rinse the kidney beans. Peel, steam and mash the carrot. Chop the onion and bell pepper. Combine everything to make balls and shape the balls into patties. Bake them for 20 minutes, and then serve on buns with salsa, lettuce, and tomato. Top each spicy bean burger with a slice of Mexican cheese if you like and serve right away.
